Show independent initiative in something YOU love and want to pursue. Prove that you will use the abundant freedom and resources MIT will provide to you to explore your interests. Show them that you're not afraid of a challenge and that you know how to work hard but that you also know how to bring balance to your life. And this is important: be honest on your application. Really. Don't try and guess as to what you THINK MIT wants to see. Because you'd be wrong. Just write honestly (from the heart, if you will). It's easy to distinguish a BS response from an honest response, and MIT will appreciate it a lot.
