Since I'm from the area, it was entirely too easy to get in. I did not have to write an essay and my high gpa (4.29) made getting in a breeze. I've heard from others that its annoying that high gpaers go here since its such an easy school--we're making it harder for them to get in.
Biology
Math
Demonstrate that you are an individual, you are a thinker and willing to participate. I hear it's a bit selective, but well worth the attempt to get in. Definitely a bargain if you want a small university with great academics.
Psychology
Apply early, express interest in student activities and mention the atmospheric science program (if you are interesting in that field of study).

Anthropology
I don't know if I would have gotten in if I had applied regular decision..My grades were not so hot my sophomore year, my GPA was like a 3.3 unweighted, and my SATs were on the average side. I wrote a really killer essay and my list of activities was really detailed.
Don't freak out if it takes a while to get your acceptance letter. Mine came on the day they said we would be notified by. And for the record, it'll be a big envelope. :)
Economics
It is not incredibly difficult, although I am sure it will become so as its reputation continues to improve.
Political Science
Make good grades and write a very impressive personal statement.
Meteorology
UNCA looks highly upon extracurricular activities. They rank that as much more important than SATs and grades.
