Weber State is really a commuter school, this leaves all choice to do any student activities in your hands. People who say that there isn't enough to do must need someone to hold their hand a lot, because the campus provides a lot of opportunities to get involved, and to be a part of a campus life. You just have to seek it out, it won't come find you. WSU is not just a 'mormon school,' there is diversity on campus, but you will tend to see whatever you want to see there. Professors in most classes are very easy to contact and to get to know.
